I made this recipe with pork chops and they turned out FABULOUS! I doubled the spices, rubbed them on the pork chops and let them sit for 15 minutes before cooking. The combo of the meat and apples were delicious!

This is such an easy recipe that offers a great complex blend of flavors. Apple gives just the right amount of sweetness to balance the pepper and thyme. Love this recipe. Served with wild rice long grain mix. Definite favorite.

I would boost the spice up a bit more and cut to 1 tbl butter next time. Substitute dry rubbed sage since I did not have fresh thyme. Good taste.

I made this recipe twice now. The first time I made a meal for two with thick pork chops. I had to do a lot of substitutions (cinnamon =cinnamon sugar, coriander = apple pie spice, cider = apple jelly and water) and the apple was not the best, but it turned out fabulously. The next time I had purchased all the seasoning I did not have and apple cider. I fed 8 people, 4 of them very ravenous teenagers. So I bought a 5 lb tenderloin, carved it into 16 slices and proceeded according to the recipe, except I heeded other reviewers and made a lot more spice rub and let the choplets marinate in the rub while I chopped the rest of the stuff. The sheer volume was too much in the pan and did not brown properly. But the taste was wonderful and even the picky eaters loved it. I served it with 2 boxes of wild rice mix and a big southwestern salad. No leftovers. I am already looking forward to making this again for just us two, this time using all the right ingredients. A keeper.

Wonderful seasonal dish. The shallot and apple combination was just lovely over the spiced pork. I took the advice of another review and doubled the spices, which is a must do! I didn't have coriander (so I subbed tarragon), and I didn't have apple cider (so I subbed a little water and raw sugar), and even with these changes the meal was delicious!

This recipe was okay. I was expecting more. I would have preferred it with the apples peeled as the skins seemed a little tough (I used Gala apples); however, I loved the flavor of the apples with shallots and thyme. I just wish it had more sauce for the pork which I thought needed a little bit more of a glaze on it. My R/M thought the spices were strange on the pork.

very, very quick and easy recipe. i used whatever pork i had in the freezer -- some kind of slightly thicker 'chop', so i just increased the cooking time by about a minute and a half. the spice mix is nice -- a little kick but not too much. the pork was very tender and juicy. the apple mixture is also very tasty. i gave this 4 stars (although it should really have 4.5 stars) because we all felt it needed a little more sweetness in the apple mix. On the second attempt, after removing it from the heat, i sprinkled it with a heaping 1/4 tsp. of brown sugar, and it was perfect. Also, the apples were a little too mushy with the recommended cooking time. i reduced it by by about a minute and it was much better. definitely now in the monthly rotation. :)

Very easy and very delicious. I used thinly sliced sweet onion and dried thyme since I didn't have shallots or fresh thyme. I served with mashed potatoes and peas. I used a non-stick pan and still got a nice sear on the meat.

Very quick and tasty meal. I didn't have any coriander but it was wonderful just the same. Actually I can't imagine it being any better. I did add the pork into the apple shallot mixture for a few seconds instead of putting it on top. I served it with oven roasted potatoes and delicata squash.

Awesome recipe full of flavour and quick to prepare. I did not have apple cider, instead used apple juice with a splash of apple cider vinegar as someone else suggested. Also, I only partially cooked the medallions, then finished them in the simmering sauce/apple mixture. This helped to keep the lean meat moist and tender.

this recipe made a fruit lover out of me. Quick, easy and delicious! Pork is super tender and a new combination for the pork "rub" that is really delightful. Breaking w/ cooking light, I did double the spice mix and added a light dash of olive oil to the skillet prior to cooking the pork. Try this dish you will not be sorry. Thanks cooking light!

This was excellent! I doubled the spice rub as suggested by other reviewers. I also gently flattened the pork slices with my hand to help them cook faster. I used fuji apples and red onion, all I had on hand, and unfortunately, used ground thyme instead of fresh. All in all, it was outstanding. Next time I'll definitely use fresh thyme, and shallots instead of onion, but this was absolutely delicious. Served it with baby kale and baby chard salad. Can't wait to eat the leftovers!

This recipe is amazing and fairly easy to make. I had the coriander in my spice cupboard, but had never used a recipe that called for it. I wish I had known a long time ago that it smelled like apples because it would have been perfect for a lot of other recipes. My fiance keeps telling me he's not a fan of pork, yet every time I make a meal with it he seems to love it, especially this one!

Not bad. I prefer a pink center on pork tenderloin, so I make thick slices (approx. 1 inch thick) and basically just sear them for about 90 seconds per side. The thyme really makes this. Reheats fine but is best served hot and fresh.

Have made twice with good results. This time we used four boneless chops because they were on super-sale, pounded a bit to get them to a uniform thickness & to cut cooking time. Pre-cooked the apple slices in the morning (maybe half the time recommended). When the pork came out of the pan, we put the apple mixture into the skillet to deglaze the pan and warm the fruit. Served with crisp-steamed broccoli & smashed yukon golds & carrots. Very nice.

I would say this is actually a 4.5 star meal. We served it with a spinach salad (as suggested) - CL's Spinach Salad from 1996 which uses apple cider vinegar, honey, and dijon mustard in the dressing and pairs beautifully with pork and apples. Didn't change a thing and I'd definitely make it again.

Delicious recipe for pork tenderloin. The apples and shallots blended so well with the spice rubbed pork tenderloin. I didn't change a thing, although I did have to cook the pork longer than 3 minutes each side. The pork was so tender & the apple and shallot glaze kept it very juicy. The spices on the pork are fantastic although I thought the rub didn't go quite as far as I was hoping. I just made the batch of spice mixture a little bigger to better coat the pork medallions. I never would have thought of putting thyme on the apples but man did it work. Amazing taste on those.

This is so easy and very, very good. The pork is moist and flavorful. We didn't have any cider, so I used chicken broth. Don't skip the bit of salt on the apples; the contrast of salty and sweet is delicious.

This was super good!! I'm learning to cook and this was the first time I have ever cooked pork. This was super easy, with really great instructions! I noticed that a few people commented that the spice rub wasnt enough to go around but I thought it was more than enough. I did take someone's advice and let the pork marinade in the spice rub for about an hour before I cooked it. Verrrrry flavorful!! I served it with roasted green beans.

First of all, this recipe is really, REALLY good. After reading the reviews, I was worried about the amount of the spice rub, so even though I only made enough pork to feed two, I still made the full amount of the rub. This meal was super easy-- I let the chops cook on the stove while I sliced my apple and shallots so the timing worked out perfectly with not a lot of preparation needed. I ALWAYS have to cook meet longer than the recipe calls for, I don't know if it is just my stovetop, but the chops needed twice as long to cook. I served this with a spinach salad and a sweet red. Amazing!!

Overall, I liked this recipe. My only complaint was the amount of spice rub for the pork wasn't quite enough. I thought about increasing it ahead of time, but didn't. I will do so next time, or I may just marinate the pork with the rub for an hour or so before cooking. This is a nice, simple recipe! I used pre-sliced apples, so the shallot was the only thing I had to chop up. I served it with a baked sweet potato - made for a nice fall dinner!

This was a big hit with my entire family! The only changes I made were the substitution of ground thyme for the coriander, which I did not have and I used 1/2 apple cider 1/2 white wine ratio. I also made a slightly unhealthy choice and dredged pork tenderloin in flour before cooking which also helped thicken up the sauce. I did not add the fresh thyme at the end.

The spice combination tasted horrible on the pork. The sautéed apples smelled and looked good until I added the thyme. After the thyme was added, that tasted weird too. Next time I'll chop the apples, instead of slicing them, forego the thyme, and give the pork chops a different spice mixture (salt, pepper, garlic).

Fixed this for dinner last night using Honey Crisp apples. It was VERY delicious. I served it with chucky mashed potatoes. My 93 year old Father even commented on how good it was. Usually he only comments on a very good steak or pasta.... he's Italian. It's a keeper.

Oh my goodness it smells so good while cooking. It was super easy and fast. I paired with a spinach salad with a apple cider vinaigrette. I will definitely make this again but maybe with a little less salt. I would avoid salt in the apple mixture. very yummy!

Really good recipe, while I was cooking I realized I did not have apple cider, I only had apple cider vinegar. I substituted 1 tbsp of the vinegar and 1/4 cup white wine and couldn't tell the difference. I served this with steamed green beans and wild rice.

The sauce and apples are sweet. For that reason, my husband (who has a sweet tooth) really liked the dish. I wasn't as keen on it, for that same reason. While it was simple and quick to prepare, if I want apples to accompany a pork dish, it is even easier to serve applesauce as a side. I can think of other pork tenderloin recipes that have more pizzazz than this.

We really enjoyed this recipe - I made a few changes, but nothing major. For the pork: substituted dried cumin for the coriander, kept the tenderloin whole and browned it in a skillet, then baked at 375 for 25 minutes. For the apples, I used one apple and one pear, and added cinnamon, nutmeg and ginger to season. I also left out the cider, since I didn't have any. I served these with a side of rosemary garlic Yukon gold mashed potatoes.

Wonderful recipe, I made two whole tenderloins and still didn't have any leftovers. I made with roasted veggies and the combo was awesome. Would add more spice than is recommended though.

Loved the mix of savory and sweet. We used a regular flat-bottom skilled, instead of a cast-ironed one, and they turned out great. We served these with Rosemary Mashed Sweet Potatoes with Shallots (Nov 2010)

We made this recipe with pork chops instead of tenderloin. Didn't have apple cider so we used 1/2 apple cider vinegar and supplemented with orange juice to make it sweet. Tasted amazing!

Made the recipe exactly as written, we loved the apples ( cooked a little less), but did not care for the spices on the pork, could just be we don't like ground coriander. I have over 200 recipes on my rotation, I will not be making this again.

Everyone im my family loved this recipe. I increased the spice rub a bit. I served it with oven roasted butternut squash. Roast a cut up squash with a little butter and brown sugar for 30 min at 400. Serve the sauteed apples over the pork and squash. Delish!

This was very easy, and great for fall. I followed the recipe exactly and it was a breeze. My whole family (husband and 2 picky boys) happily ate it. I served it with mashed potatoes and pickled cabbage. My husband usually thinks pork is too dry, but this wasn't at all. Will definitely make this again.

I fixed this for company and everyone loved it.Left the pork tenderloin whole and cooked 15 minutes on George Forman and 15 minutes in the oven.Served with mashed sweet potato and hot wilted spinach salad with pecans.Very easy and very tasty.Will definitely make it again.

Often, I think that pork dishes tend to be somewhat dry, but not this one. It was very tender and flavorful. It was possibly the best pork dish I've ever made! It's also a plus that it's healthy and easy. I would make this for a weeknight dinner or for company. I served it with sweet and sour red cabbage, which was a great accompaniment.

This was wonderful! The only thing I would change would be to cook the apples less because mine came out too soft, but still delicious. I made this for a weeknight meal with mashed sweet potatoes and roasted green beans, but it could easily be served for company. The presentation was beautiful and the taste just as good; highly recommended.

Wouldn't change a thing. The kids loved how the kitchen smelled while it was cooking! Cooks very quickly, so have everything set up. Served with steamed green beans. Will definately make again!

I made this for a weeknight dinner for my husband and I. I cooked the pork whole because it is too much trouble to cut it up and saute it. It was DELICIOUS. I served it with broccoli and garlic mashed potatoes. Will make again. It is hard to mess up any pork tenderloin recipe. Perfect fall menu.

I followed the recipe with the exception of the cider; subbed apple juice and it was just fine. Pan juices are excellent, recipe is as easy at is sounds. I used a non-stick pan and had no issues. Served with garlic mashed red potatoes and green beans; pumpkin bread for dessert; perfect fall meal. Ideal for a special occasion without keeping you in the kitchen forever.
