These Easy Tortilla Pizzas are one of the best meals for busy weeknights! They're light, fresh, and take minutes to make!

With all the fun and festive distractions at this time of year, I like to keep dinner fairly simple. Who needs to extra stress, right?

I love pizza, but sometimes it can feel like a lot of work, which is why I love Tortilla Pizzas!

Tortilla pizzas are one of my favorite easy meals. They are light, fresh, and take minutes to prepare. What could be better?

You are going to absolutely love these Easy Tortilla Pizzas!

These mini vegetarian pizzas are crunchy and healthy. You'll start with a flour tortilla (tortilla wraps work, too), then add your favorite toppings.

The result is a thin, crispy pizza that your whole family is sure to love! You can even have the kids help make dinner ... they're that easy.

I'm going to show you how to make these Easy Tortilla Pizzas with three different toppings. But feel free to experiment with your own combinations. Anything goes!

How to Make Easy Tortilla Pizzas

Once you learn how to make these simple Tortilla Pizzas, they're sure to become part of your regular dinner rotation. They're that easy and delicious!

I've come up with three toppings for these yummy mini pizzas: Tomato-Basil (Margherita), Spicy Spinach, and Mushroom-Thyme. The Tomato-Basil Pizza has no sauce, and the other two use my Quick Pizza Sauce recipe that's super simple to make.

Start the sauce first, if you're using using. That way it will have time to cool a bit before you make the pizzas.

The Tomato-Basil Tortilla Pizzas require no cook time at all, apart from baking. So if you're really in a time pinch, this is your pizza!

For the Mushroom-Thyme Pizza, you simply need to saute the mushrooms until browned, then season them with thyme and salt. If you're making the Spicy Spinach Pizzas, you'll saute the spinach with garlic and red pepper flakes, just until wilted.

To assemble the pizzas, you'll top flour tortillas with pizza sauce (or olive oil, for the Tomato-Basil Pizza). Then, comes the cheese, and finally, the toppings.

After you've adding your pizza toppings, it's time to bake your mini Tortilla Pizzas. They're going to get nice and crispy!

Make sure to keep an eye on your pizzas, because they cook quickly. They take about 10 minutes, and then it's time to eat ... the best part, for sure.

Ingredients

For Tomato-Basil Tortilla Pizzas:

  • 4 (8-inch) flour tortillas
  • extra virgin olive oil
  • salt
  • crushed red pepper flakes, optional
  • 8 ounces fresh mozzarella (not water-packed)
  • 1 pint cherry tomatoes, halved or quartered (depending on size)
  • 8 medium basil leaves, thinly sliced

For Mushroom-Thyme Tortilla Pizzas:

  • 1 tablespoon extra virgin olive oil
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • ½ teaspoon thyme
  • salt
  • 4 (8-inch) flour tortillas
  • ½ cup Quick Pizza Sauce (recipe follows)
  • 1 cup shredded Monterey Jack cheese
  • 4 green onions, thinly sliced (green part only)

For Spicy Spinach Tortilla Pizzas:

  • 1 tablespoon extra virgin olive oil
  • 2 cloves garlic, minced
  • ½ teaspoon crushed red pepper flakes
  • 1 (6-ounce) bag baby spinach
  • salt
  • 4 (8-inch) flour tortillas
  • ½ cup Quick Pizza Sauce (recipe follows)
  • 1 ⅓ cup shredded mozzarella cheese

For Quick Pizza Sauce:

  • 1 (14-ounce) can fire-roasted diced tomatoes
  • 1 tablespoon extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • ½ teaspoon crushed red pepper flakes, optional
  • salt

Instructions

  • Preheat oven to 425 degrees.

Prepare Tomato-Basil Tortilla Pizzas:

  • Place tortillas in a single layer on a baking sheet. Brush tortillas lightly with olive oil and sprinkle with salt. Add crushed red pepper flakes, if using.

  • Pull mozzarella apart into medium-size pieces and top each tortilla with a quarter of the cheese. (The mozzarella may not completely cover the tortilla.) Top cheese with tomatoes.

  • Bake pizzas until edges are lightly browned and cheese is melted, about 10 minutes.

  • Top each pizza with sliced basil, cut into quarters, and serve. Enjoy!

Prepare Mushroom-Thyme Tortilla Pizzas:

  • Heat olive oil in a medium skillet over medium-high heat. Add garlic and cook until fragrant (about 30 seconds), stirring constantly.

  • Add mushrooms and thyme; cook, stirring often, until mushrooms are lightly browned. Remove from heat and season with salt to taste. Cool slightly before using.

  • Place tortillas in a single layer on a baking sheet. Top each tortilla with about 2 tablespoons of pizza sauce. Cover sauce with a layer of cheese and then top with mushrooms.

  • Bake pizzas until edges are lightly browned and cheese is melted, about 10 minutes.

  • Top each pizza with green onions, cut into quarters, and serve. Enjoy!

Prepare Spicy Spinach Tortilla Pizzas:

  • Heat olive oil in a medium skillet over medium-high heat. Add garlic and cook until fragrant (about 30 seconds), stirring constantly.

  • Add spinach and cook, stirring often, until it's wilted. Remove from heat and season with salt to taste. Cool slightly before using and drain off any excess liquid.

  • Place tortillas in a single layer on a baking sheet. Top each tortilla with about 2 tablespoons of pizza sauce. Cover sauce with a layer of cheese and then top with spinach.

  • Bake pizzas until edges are lightly browned and cheese is melted, about 10 minutes

  • Cut each pizza into quarters and serve.

Prepare Quick Pizza Sauce:

  • Place tomatoes in food processor (or blender) and pulse until finely chopped. Set aside.

  • Heat olive oil in a medium skillet over medium-high heat. Add garlic and cook until fragrant (about 30 seconds), stirring constantly.

  • Add tomatoes, oregano, basil, and crushed red pepper, if using.

  • Cook until thickened, about 5 to 10 minutes. Remove from heat, then season with salt to taste.
